Matured for a minimum of 36 months in our selected producer's drying rooms, this acorn-flavoured Iberian ham weighs between 7 and 8.5 kg. Individually selected by Oscar Noguera in consultation with the centennial producer in Guijuelo.
Produced from 75% Iberian pigs bred in the wild for the last 6 months before slaughter, in accordance with the rules of the Guijuelo Certificate of Origin, feeding on acorns and natural pastures throughout this period.
Slightly salted and exceptionally meltingly soft despite its maturing time, the flavours are gradually savoured with a subtle aroma of hazelnut.
To best appreciate this delicacy, we highly recommend consuming it within 6 to 8 weeks following its first cut.
