Matured for a minimum period of 24 months in our selected producer's drying rooms, this exceptional shoulder weighs between 5 and 6 kg.
Slightly salted, meltingly soft, with a distinct "hazelnut" taste, its flavours are gradually and lastingly savoured.
To best appreciate this delicacy, we highly recommend consuming it within 4 to 5 weeks following its first cut.
