Since early 2014 the term "Pata Negra" can only be adjoined to the 100% Iberian bellota ham (the highest of the four existing qualities).
This ham is actualy a pata negra. From 100% Iberian pigs fed with acorns and herbs they find in the mountains as they are released there for at least the last six months of their breeding.

Here sliced by hand and placed in a bag under vacuum to 100 g.
